Meatball pot roast is going to be your new favorite quick and easy meal. This recipe uses frozen beef meatballs in place of a roast for a meal that’s almost more delicious than the original!
My family is big on meat and potatoes.
And yes they love a good pot roast with all the fixings.
But depending on how you make it, it either needs a pricy roast.
Most of the time, I’d prefer to skip the pricy roast.
Save a few pennies, you know?
Well when with meatball pot roast I can while still enjoying classic pot roast flavors.
This meal tastes just like the more expensive, longer cooking counterpart.
We all love it and I know you will too!
Ingredients
To make this you’ll need:
- Meatballs– Beef meatballs that are not Italian style.
- Potatoes– Baby potatoes or other little potatoes washed and cut in half if they are too big
- Baby carrots
- Beef broth– I highly recommend low sodium beef broth so you can better control how salty it is
- Tomato paste– A full 8 ounce can
- Onion soup mix– The kind in a packet.
- Worcestershire sauce
- Slurry ingredients– Cornstarch and cold water
How to Make
Making meatball pot roast is easy!
To do it, whisk the broth, tomato paste, soup mix, and Worcestershire sauce together in a mixing bowl to combine.
Then pour the sauce into a large Dutch oven, letting it simmer for 5 minutes.
Remove the pot from the heat and gently toss the remaining ingredients together in the sauce to coat them.
Cover the pot and bake at 375 for 45 minutes.
At this point, mix the cornstarch and cold water together to form a slurry and stir it into the pt.
Cover it again and let everything cook for another 30 minutes.
Serve it warm with a good hunk of crusty bread.
Enjoy!
Storing Leftovers
Store leftovers in an airtight container in the fridge for up to 4 days.
Reheat them in the microwave until warmed through.
Tips and Tricks
- While technically you could substitute chicken or turkey meatballs, the meatballs will NOT have the classic pot roast flavor if you do.
- You could use homemade meatballs as long as they are not Italian style.
- Want to add more veggies? Add some baby bella mushrooms into the mix.
