Quick And Easy Tuna Patties

So when I start to feel like my dinner rotation needs a little shaking up, I look to other mains.

And canned tuna is an underused dinnertime hero.

It’s tasty, affordable, and different from the usual.

These quick and easy tuna patties are the perfect way to add some variety to your table without breaking the bank or a lot of extra effort.

Ingredients

To make these you’ll need:

  • Canned tuna– Two 7 ounce cans of albacore tuna canned in water. Drain the tuna well and flake it apart with a fork.
  • Fresh herbs– Thinly sliced green onions and chopped parsley leaves
  • Breadcrumbs– Plain breadcrumbs are fine. You could substitute seasoned or panko if that’s what you have on hand.
  • Eggs– A whole egg plus 1 egg yolk
  • Mayonnaise– Real full fat mayonnaise
  • Lemon juice– Real is best but bottled will work.
  • Seasoning salt
  • Oil– Canola oil or another light colored for frying.

How to Make

This quick and easy tuna patties are amazing for even super busy days.

To do it,  mix the tuna, sliced green onions, parsley, breadcrumbs, egg and egg yolk, mayonnaise, seasoning salt, and lemon juice together in a large bowl until everything is combined.

Divide the mixture into 4 equal portions and shape them into patties.

Heat the oil in a large skillet over medium heat, swirling the skillet so the oil coats as much of the bottom of the pan as possible.

Fry the patties in the oil for about 5 minutes on each side or until both sides are golden brown, crispy, and heated through.

Serve warm and enjoy!

Serving Suggestions

Tuna patties make delicious sandwiches if you serve them in a bun with some tartar sauce and a side of fries.

You can also serve them more crab cake style with your favorite sides like rice, baked potatoes, or a salad.

Storing Leftovers

Store any leftovers in an airtight container in the fridge for up to 3 days.

Reheat them on a pan over medium heat on the stove until warmed through or pop them in a hot oven until warmed through.

Tips and Tricks

  • You can use this recipe with other canned fish like canned salmon or even canned crab. Not into seafood? Substitute canned chicken.
  • If you are really concerned about budget or just don’t have the herbs on hand, you can omit the green onions and parsley leaves. If you have it you can use onion powder and dried parsley.
  • Don’t want to use oil? You could spray your pan with nonstick spray instead.

Ingredients

  • 2 7 oz cans albacore tuna in water drained well & flaked
  • 3-4 green onions thinly sliced
  • 2 tbsp washed, chopped fresh parsley leaves
  • 1/2 cup plain breadcrumbs
  • 1 large egg + 1 large egg yolk
  • 2 1/2 tbsp mayonnaise
  • 1 1/2 tsp lemon juice
  • 1 tsp seasoning salt
  • 3 tbsp canola oil for frying

Instructions

  • Add the tuna, onions, parsley, breadcrumbs, eggs, mayonnaise, salt, and lemon juice to a large mixing bowl. Stir everything together until evenly combined.
    2 7 oz cans albacore tuna in water, 3-4 green onions, 2 tbsp washed, chopped fresh parsley leaves, 1/2 cup plain breadcrumbs, 1 large egg, 2 1/2 tbsp mayonnaise, 1 1/2 tsp lemon juice, 1 tsp seasoning salt
  • Divide the tuna mixture into 4 equal portions then shape them into patties.
  • Add the oil to a large skillet set over medium heat, and tilt the skillet slightly to swirl the oil so that it coats the whole bottom as much as possible.
    3 tbsp canola oil
  • Add the patties to the pan, careful to avoid the hot oil, and cook them for roughly 5 minutes on each side- or until golden brown and crispy on the outside and heated through.
  • Serve warm and enjoy!
