Slow Cooker Chicken Fajitas

Slow cooker chicken fajitas are the easiest ever way to make a large batch of the Tex Mex classic. Just three ingredients and the world’s easiest prep and you are on your way to dinner being done!

When I have a particularly busy week coming up, meal prepping is key.

And nothing is easier than making a large batch of chicken fajitas in the crock pot.

We’re talking a true dump and go meal that takes about 5 minutes, if that, to put together.

And then you have tender, perfectly seasoned chicken breast to eat all week.

Ingredients

To make this you’ll need:

  • Peppers and onions– I’m all about making this easy so buy the precut frozen pepper and onion blend from the store. 
  • Chicken– This calls for chicken tenderloins, but you could sub boneless skinless breasts if you cut them into strips.
  • Fajita seasoning– Your favorite packets.
  • Chicken broth– Totally optional.

How to Make

These slow cooker chicken fajitas are the easiest thing you will ever make!

To do it, spray the inside of your slow cooker with nonstick spray.

If you are using it, add chicken broth to the bottom of the pot.

Then add the chicken to the bottom of the slow cooker followed by the frozen veggies.

Sprinkle the seasoning packets overtop and give everything a stir.

Cover the slow cooker and cook the chicken on high for 2 to 3 hours or low for 3 to 4 hours or until the chicken is cooked through.

Stir the mixture well to coat the chicken in the sauce and break up the chicken a bit.

Serve and enjoy!

Serving Suggestions

We, of course, serve this chicken fajita style with all the fajita fixings.

For meal prep, I also pair it with rice and salad greens.

Storing Leftovers

Store leftovers in an airtight container for up to 4 days.

Tips and Tricks

  • This recipe makes a very large batch, which is perfect for meal prepping. You can halve to make a more normal single dinner-sized potions.
  • Want some kick to it? Add a can of diced jalapenos.
  • If you don’t have chicken broth or don’t want to use it, that’s fine. The chicken and the veggies will release some moisture as they cook.

Ingredients

  • 3 12 oz bags pepper & onion blend
  • 2- 3 lbs fresh chicken tenderloins
  • 2 1 oz packets dry fajita seasoning
  • 1/3 cup chicken broth optional

Instructions

  • Lightly spray the inside of your slow cooker with nonstick cooking spray, then add the chicken broth to the bottom of the pot.
  • Add the chicken to the bottom of the slow cooker, then pour the frozen vegetable blend evenly out overtop.
  • Sprinkle the seasoning packets evenly out overtop, and gently stir the vegetables until evenly incorporated.
  • Cover and cook on HIGH for 2-3 hours, or LOW for 3-4 hours- just until the chicken is cooked through.
  • Give the mixture a good stir to coat everything in sauce and break up the chicken.
  • Serve & enjoy!

    It will look nothing like the pictures. it will be extremely liquidity!! Like almost all liquid!!! I made this for Superbowl 2025 and not worth it!!!
