It’s the stuff of heaven I tell you.
We’re talking seasoned beef similar to sloppy joe meat with lots of cheese loaded into a soft sub rolls and slathered with condiments.
Delicious!
My slow cooker version gives you all the same tastes but lets you make a batch and have it ready to go for a party, dinner, or anytime.
What is a chopped cheese?
Chopped cheese sandwiches are also known as the chop cheese.
These sandwiches are sort of a cross between a cheeseburger, a Philly cheesesteak, and sloppy joe.
They feature browned ground beef in a gravy similar to sloppy joe gravy, tons of cheese, onions, tomatoes, and condiments tucked into a hero roll.
Ingredients
To make this you’ll need:
- Ground beef– Make sure you use lean ground beef
- Onion– A large yellow onion diced
- Beef broth– To make the base of the sloppy joe style gravy
- Condiments– Ketchup and Worcestershire sauce
- Black pepper
- Slurry ingredients– Cornstarch and water to thicken things up
- Cheese– Sliced American cheese
- Sandwich fixings– Sub buns, lettuce and tomatoes
How to Make
Making these slow cooker chopped cheese sandwiches is a snap!
Just brown the ground beef and onion in a large skillet until the beef is cooked through.
Drain off any grease.
Then add the beef, beef broth, ketchup, Worcestershire sauce, and black pepper to a 6 quart slow cooker.
Cook the mixture on low for 4-6 hours.
Then, stir the cornstarch and water together until it’s combined and then stir it into the slow cooker.
Once you’ve added the slurry to the beef mixture, stir the cheese slices in and keep stirring until they are are melted.
Build the chop cheese by piling the beef mixture into a sub roll and topping it with lettuce and tomatoes.
Enjoy!
Storing Leftovers
Store leftover chop cheese beef in an airtight container in the fridge for up to 3 days.
Reheat in the microwave.

- Make sure you use lean ground beef so it doesn’t cook down too much or get too greasy.
- You can use any size sub roll you’d like, just make sure you are using bakery style rolls.
- Top each individual sandwich with whatever condiments you like like mayo, mustard, and ketchup.

Slow Cooker Ground Beef Chopped Cheese Sandwiches
Ingredients
- 2 pounds lean ground beef
- 1 large yellow onion diced
- 1 cup beef broth
- 1 tbsp ketchup
- 1 tbsp Worcestershire sauce
- 1 tsp black pepper
- 1 tbsp cornstarch
- 2 tbsp cold water
- 12 slices American cheese
- 4-6 sub buns
- Lettuce and tomato for serving
Instructions

- Mix the cornstarch with the cold water and add to the slow cooker and stir.1 tbsp cornstarch, 2 tbsp cold water
- Add the cheese slices and stir until melted.12 slices American cheese
