It lets me make insanely delicious dishes like this creamy chicken tortellini soup with almost no work whatsoever.
I’ll tell you- it’s a lazy girl’s bff for that reason alone!
And you’ll totally understand why as soon as you taste this rich, cheesy soup.
What is crack chicken?
Ok, so it might not have the nicest name but crack chicken is a Pinterest sensation that is super addictive because it is so dang delish.
It’s a mix of tender chicken breast, cream cheese, salty bacon, cheddar cheese, and ranch.
OH. YES.
It get’s the name from the addictive combination of irresistible flavors that all meld together perfectly. Hard to resist, especially after a single bite.
Now imagine all of those flavors with pillows of cheesy pasta and creamy soup.
OMG.
Ingredients
To make this soup you’ll need:
- Chicken– Boneless, skinless breasts.
- Onion– Half of one, chopped.
- Cream cheese– Full fat, real cream cheese not the lower fat varieties.
- Ranch seasoning– A 1 ounce premade packet.
- Bacon– Cooked and chopped.
- Chicken broth– I don’t recommend subbing a different kind of broth for this.
- Cheese tortellini– The frozen kind.
- Cheese– Lots and lots of shredded cheddar.
How to Make
To make this, add the chicken, onion, cream cheese, ranch dressing mix, bacon, and chicken broth to your slow cooker.
Cover and cook on low for 5 hours or high for 3 hours.
Then, remove the chicken and shred with two forks.
Return the shredded chicken back to the slow cooker and stir in the frozen tortellini.
Cover and let cook 45 minutes to an hour until tortellini is cooked.
Stir the cheddar cheese into the soup right before you are ready to eat and let melt.
Garnish with more cheese, bacon and parsley.
Serve and enjoy!
Storing
Store leftovers in an air tight container in the fridge for 3 to 4 days.
Reheat in the slow cooker, cooking until warmed through or microwave individual servings.
Tips and Tricks
- Feel free to add a little veggie action by stirring in some spinach, broccoli or even peas when you add the tortellini to the soup.
- You could change the kind of tortellini and use spinach tortellini or even chicken tortellini.
- Can’t find tortellini? Use frozen gnocchi instead.
- If the cream cheese isn’t smooth enough for you, whisk the cheese and broth a bit when you remove the chicken to shred.

Super yummy!! I did use a package of real bacon pieces to save time. I also added an extra cup of chicken broth and half a package extra of ranch dressing seasoning.
