Ingredients
To make these you’ll need:
- Hash browns– 2 packages of refrigerated shredded hash browns.
- Cheese– Shredded cheddar cheese
- Onion– Diced yellow onion
- Cream of chicken soup– You could substitute cream of cheddar or cream of whatever you have on hand.
- French onion dip– I highly recommend Dean’s French onion dip.
- Barbecue rub– Your favorite kind.
How to Make
These smoked cheesy potatoes are as easy to make as they are delicious.
To make them, just stir all the ingredients together in a disposable 9×13″ aluminum tin.
Smoke the potatoes at 225 for 2 to 3 hours or until they are warm through and bubbly.
Stir the potatoes at least twice during cooking.
Serve and enjoy!
What kind of wood should I use to smoke potatoes?
As always, you can use what you prefer but I enjoy a stronger wood like hickory or mesquite or a sweeter wood like cherry for potatoes.
Storing Leftovers
Store leftovers in an airtight container in the fridge for up to 4 days.
Reheat in the microwave until warm.

- You can substitute other cheese if you prefer. Pepper jack would be amazing and add a little kick.
- Feel free to adjust the amount of barbecue rub to suit your preferences.

- 4 1/2 cups shredded cheddar cheese
- 1 cup diced yellow onion
- 1 10.5 oz can cream of chicken soup
- 1 cup Dean's french onion dip about 8 ounces
- 1/2 tbsp barbecue rub
Instructions
