This Southwestern breakfast skillet recipe is so easy that my sons can make it on their own and I can even handle it before I have my coffee.
Plus, everyone eats it happily and it’s chock full of filling protein and big flavors.

A breakfast skillet is just another name for a breakfast scramble, which is a dish where eggs get scrambled with lots of different toppings all in one skillet.
Ingredients
To make this you’ll need:
- Eggs– The base of any good scramble is definitely eggs.
- Milk– One tablespoon of milk per egg. Whole milk is best.
- Butter– Salted preferred but you can use unsalted and then add salt to taste.
- Black beans– A can of black beans drained and rinsed
- Tortilla chips– Like Tostitos
- Salsa– Your favorite kind
- Cheese– Shredded cheddar. You could also use pepper jack or Mexican blend.
- Green onions– Thinly sliced.
How to Make
This Southwestern breakfast skillet recipe is pretty easy.
Start by cracking the eggs into a small mixing bowl and whisking them together with the milk until evenly combined.
Set the eggs aside.
Melt the butter in a large skillet set over medium low heat to melt.
When the butter has melted, pour the beaten eggs into the pan.
Scramble the eggs, continuously using a spatula to scrape them from the sides and the bottom, just until they’re soft scrambled.
Then stir the beans and half of the chips into the skillet, breaking the chips up as you do.
Spread the salsa evenly overtop of the skillet, followed by the cheese.
Cover the skillet to let the cheese to melt.
When the cheese is melted, sprinkle with the sliced green onions, serve warm, and enjoy!
Storing Leftovers
Store leftovers in an airtight container in the fridge for up to 3 days or so.
Keep in mind the tortilla chips will soften the longer you store them in the fridge.
Tips and Tricks
- This serves 4 but it it is very easy to adjust to feed more. The most important part is keeping the egg to milk ratio at one egg to one tablespoon of milk.
- You can add other veggies into the mix like red and green pepper slices.
- This Southwestern scramble is delicious when you top it with your favorite toppings like sour cream, diced jalapenos, cilantro, etc.

- 1 bunch green onions thinly sliced
