And this Southern style swamp soup spoke directly to me with its bold flavors and accessible ingredients that are very popular in Southern food.
What is swamp soup?
There are two versions of swamp soup floating out.
One version features a green soup with ginger, garlic, and chicken.
My version is the kind that’s based more on bayou cooking (hence the name swamp) and has collard greens, hoppin john, and Cajun seasonings.
Ingredients
To make this you’ll need:
- Sausage– Andouille sausage sliced into coins and then halved
- Butter– Unsalted
- Onion– Yellow onion, peeled and diced
- Canned goods– Seasoned collared greens, drained corn kernels, seasoned drained pinto beans, hoppin john, and diced tomatoes with green chiles
- Cajun seasoning– Your favorite kind
- Chicken broth– You can substitute stock if needed
How to Make
This swamp soup is so easy to make!
Just saute the sausage in a large Dutch oven, or other heavy bottomed soup pot, until browned.
Once the sausage is nice and brown, transfer it to a waiting plate and set it aside.
Melt the butter in the pot.
Once the butter is melted, saute the onion in the melted butter until the onion has softened- roughly 3-4 minutes.
Then stir all of the canned goods into the pot along with the sausage.
Bring the soup to a boil, then immediately reduce the heat to low and simmer for 15-20 minutes, stirring occasionally.
Ladle into bowls, serve warm, and enjoy!
Storing Leftovers
Store leftovers in an airtight container in the fridge for up to 4 days or so.
Reheat in the microwave until warmed through.
Tips and Tricks
- If you can’t find the exact canned goods mentioned, it’s ok- this soup is very forgiving and easily adaptable to what your grocery store carries.
- I highly recommend serving this with corn bread.
- You can add a little extra kick by adding extra cajun seasoning or a few dashes of hot sauce.

Instructions
