Taco Spaghetti Recipe (One Pot Meal)

Taco spaghetti gives your family the best of both worlds by combining flavors from your Tex Mex favorites with pasta. Kids and adults alike will both go crazy for this zesty meal mash up!

Two meals are constantly on repeat in our house: spaghetti and tacos.

Why not combine them into easy, family friendly meal with this taco spaghetti recipe?

It’s an easy one pot meal, meaning there’s not a lot of clean up afterwards.

Winner, winner taco spaghetti dinner!

Ingredients

To make this you’ll need:

  • Ground beef– Go for lean ground beef so the meat isn’t too greasy.
  • Aromatics– Diced white onion and minced garlic
  • Tomatoes– An undrained can of diced tomatoes.
  • Broth– Chicken broth preferred but vegetable or beef broth would both work. However, if you substitute either of those you will change the flavor slightly.
  • Taco seasoning– A packet of your favorite kind
  • Canned diced chile peppers– Drain it
  • Pasta– Spaghetti preferably but any pasta will work.
  • Cheese– Shredded cheddar
  • Taco toppings– Whatever fixin’s you like on your tacos!

How to Make

Taco spaghetti is truly a one pot wonder!

To make it, cook the the ground beef, onion, and garlic in a large skillet set over medium heat.

Break the beef apart and keep cooking it until the beef’s cooked through and no pink remains.

Then, strain the beef to remove as much excess grease as possible.

Return the beef to the skillet.

Stir the taco seasoning, undrained tomatoes, broth, and chiles into the skillet.

Then add the spaghetti to the pot, pressing it down under the liquid.

Bring the mixture to a boil.

Then reduce the mixture to a simmer.

Cover the skillet and keep simmering the spaghetti for about 15 minutes or until the spaghetti is done.

Stir the pasta halfway through, presssing the spaghetti back into the liquid.

Make sure to cover the skillet again.

Then, remove the lid, stir very well, and let the mixture keep simmering just until the liquid’s reduced.

At this point, take the skillet off the heat.

Sprinkle the cheese evenly out overtop of the cooked spaghetti, then cover the pot with the lid.

Let the mixture rest for 5 minutes, or until the cheese has completely melted.

Serve warm garnished with your favorite taco fixin’s!

Topping Ideas

Anything you would put on a taco, you can put on this spaghetti.

Our favorites include:

  • shredded lettuce
  • pico de gallo
  • sour cream
  • diced jalapenos
  • avocado slices

Storing Leftovers

Store leftovers in an airtight container in the fridge for up to 4 days.

Reheat it in the microwave until warmed through.

Tips and Tricks

  • My kids enjoy this served in taco shells, inside burritos, and have even used it as grilled cheese filling before.
  • Want to really make everyone’s day? This meal is so good served with a drizzle of con queso dip on top!
  • You can double this to serve a larger crowd, but you’ll need to use a bigger pot like a Dutch oven and possibly add a little more broth.
  • Want more veggies in this meal? Add canned corn and/or black beans to the mix.

Ingredients

  • 1 1/2 lbs lean ground beef
  • 1 small white onion diced
  • 1 tbsp minced garlic
  • 1 14 oz can diced tomatoes undrained
  • 2 cups chicken broth
  • 1 packet taco seasoning
  • 2 oz drained diced green chiles
  • 8 oz spaghetti pasta
  • 1 cup shredded cheddar cheese
  • favorite taco toppings for garnish

Instructions

  • Add the ground beef, onion, and garlic to a large skillet set over medium heat. Cook, crumbling as it does, until the beef's cooked through and no pink remains. Strain the beef to remove as much excess grease as possible, then return to the skillet.

  • Add the taco seasoning, undrained tomatoes, broth, and chiles to the skillet. Stir together to evenly combine.

  • Add the spaghetti to the pot, and bring the mixture to a boil. Press on the spaghetti to push it down under the liquid then reduce the mixture to a simmer, cover, and simmer for 15 minutes- or until the spaghetti is done. Stir halfway through, press the spaghetti back into the liquid, and recover.
    8 oz spaghetti pasta
  • Remove the lid, stir very well, and continue simmering for 1-2 minutes- just until the liquid's reduced. Remove the skillet from heat.
  • Sprinkle the cheese evenly out overtop of the cooked spaghetti, then cover the pot with the lid. Let the mixture rest for 5 minutes, or until the cheese has completely melted.
    1 cup shredded cheddar cheese
  • Serve warm garnished with your favorite taco fixins!
