Soup gets a bad rap for being so involved.

I mean if you say soup is for dinner, you immediately wonder how much chopping and simmering is going to need to happen.

Well, friends, there is absolutely none of that with this cozy soup.

Nope!

You just add a few ingredients you probably already have in your pantry to a pot and like magic, you get homemade creamy tomato soup!

It couldn’t be easier.

Ingredients

To make this you’ll need:

  • Marinara sauce– You can use your favorite jarred sauce. You’ll need roughly double the amount of marinara sauce as alfredo sauce.
  • Alfredo sauce– Your favorite store bought kind.
  • Chicken stock
  • Tortellini– Frozen or refrigerated tortellini if you are using it.

How to Make

This is the easiest soup ever to make! In fact it’s perfect for beginners!

To make it, just stir the marinara sauce, alfredo sauce, and chicken broth together in a soup pot until evenly combined.

Heat the soup over medium heat until hot, stirring occasionally.

If you aren’t using tortellini, you can serve when the soup is hot.

But if you’d like to add the tortellini, cook the tortellini according to the package directions while the soup warms.

Then stir the cooked tortellini into the hot soup.

Ladle the soup into bowls and serve warm.

Top with fresh Parmesan cheese and basil if desired.

Enjoy!

Storing Leftovers

Store leftovers in an airtight container in the fridge for up to 4 days.

But if you are expecting to have leftovers, don’t mix the tortellini into the soup as it will absorb the liquid and get sort of soggy.

Instead, just add the tortellini directly to the soup bowls and save the leftover tortellini separately.

Tips and Tricks

  • This is delicious exactly the way it is but you could add even more flavor by adding some minced garlic to the soup (you can buy it in jars so you don’t have to chop!) or a little heat with some red pepper flakes.
  • We normally use cheese tortellini in this but you could any kind you like.
  • If you don’t want to serve it with tortellini, top it with croutons or serve with a good crusty loaf of bread.
