Hosting can be hectic, whether it’s a planned party or involves last minute guests.

Knowing that, I make sure to have a handful of quick & easy recipes that use ingredients I always keep on hand.

This whipped ricotta cheese spread is one of my favorites to use when things get hectic, but I want to put out something delicious.

It only needs 2 ingredients, but can easily be customized into something more fancy.

It’s the ultimate creamy cheese dip that will impress all your guests.

I guarantee no one will ever guess it only took you 5 minutes to throw together!

Ingredients Needed

Only two ingredients form the base of this recipe- that’s right 2!

  • Ricotta Cheese – Use full fat ricotta cheese for this recipe; however, you can use any brand you like. If using a generic brand, make sure it’s one you’ve used or tasted before and that you like it.
  • Olive Oil – You’ll need two tablespoons of extra virgin olive oil, preferably a quality oil.

That’s it.

Some ricotta cheese & extra virgin olive oil, and you’re already almost done making the most delicious whipped ricotta cheese spread you never knew you needed in your life!

How To Make

Whipping up this two ingredient cheese spread is super easy!

However, you have two different methods you can use depending on what’s easier and what appliances you own.

This can be made using a food processor or an immersion blender.

Both ways will give you the same creamy result, so it’s really up to personal preference which method you choose.

Using A Food Processor

To make this in the food processor, fit the bowl with the blade attachment.

Add both the cheese and oil.

Put on the lid, turning to close, and whip until smooth & creamy- about 1-2 minutes.

Using An Immersion Blender

If using an immersion blender to whip up this ricotta cheese dip, start by adding the cheese & oil to a medium mixing bowl.

Using an immersion blender, whip the two ingredients together on high speed until smooth & creamy.

You’ll see it almost immediately begin getting creamier as it blends.

Make sure you’ve gotten all of the cheese, scraping down the sides of the bowl as needed.

To Serve

Once your whipped ricotta cheese is ready, spread it out evenly into a shallow dish. Then you’re ready to serve, or garnish as desired.

At it’s heart this is really just an amazing cheese spread, you can choose to keep it simple and serve it on it’s own- a classic, timeless appetizer.

Or you can garnish it, and those are what can really elevate it and make it- taking it beyond a simple cheese spread and turning it into something easy, but with gourmet flavor.

Our favorite way to garnish this whipped ricotta cheese spread is with an extra drizzle of olive oil, honey, a pinch of course sea salt, crushed red pepper flakes, & freshly chopped parsley leaves.

Garnish Ideas

You can absolutely serve this whipped ricotta with a drizzle of honey and freshly cut fruit on top.

It’s both stunning and delicious, and makes a delicious addition to breakfast and brunches.

Our family tends to prefer things on the more savory side though.

Some of our favorite garnish ideas include the following:

  • Chiffonade fresh basil leaves, chopped walnuts, and chopped sundried tomatoes
  • A swirl of homemade basil pesto
  • A simple sprinkle of sea salt with freshly cracked black pepper
  • Freshly grated lemon zest, pomegranate arils, and chopped roasted pistachios

Ingredients

  • 16-24 ounces full fat ricotta cheese
  • 2 tbsp extra virgin olive oil

Instructions

Using A Food Processor

  • Add the ricotta cheese & oil to the bowl of a food processor fitted with the blade attachment.
  • Whip until smooth & creamy, about 1-2 minutes.

Using An Immersion Blender

  • Add the ricotta cheese & oil to a mixing bowl.
  • Using an immersion blender, mix on high speed until smooth & creamy.
  • Scrape down the sides, and repeat if necessary.

To Serve

  • Spread the whipped cheese spread evenly out in a shallow bowl or platter.
  • Garnish, as desired, (you can also leave it plain) and serve it with crusty baguette slices & enjoy!
