Pork Egg Roll Soup

Pork egg roll soup is all the flavors of your favorite takeout appetizer in a cozy soup. Sauteed ground sausage and a blend of veggies and seasonings for a delicious spin on the classic Chinese dish.

Ingredients

  • 1 - 1 1/2 lbs ground sausage
  • 1 small yellow onion peeled & diced
  • 1 1/2 cups matchstick carrots diced
  • 1 16 oz pkg tri color coleslaw mix
  • 1 1/2 tsp garlic powder
  • salt & pepper to taste
  • 6-8 cups chicken broth low sodium recommended
  • 1 tbsp ginger paste
  • 2 tbsp soy sauce
  • 2 tsp sesame oil
  • crispy wonton strips for garnish
  • thinly sliced green onions for garnish
  • sesame seeds for garnish

Instructions

  • Add the sausage, onion, and carrots to a large Dutch oven, or other heavy bottom soup pot. Cook, over medium heat, and crumble until the sausage has cooked through. Strain off excess grease.

  • Add the cabbage, garlic, salt, and pepper to the pot. Stir them to evenly combine and cook just until the cabbage has wilted.
    1 16 oz pkg tri color coleslaw mix, 1 1/2 tsp garlic powder, salt & pepper
  • Add the remaining ingredients to the pot, again stirring to combine.
    6-8 cups chicken broth, 1 tbsp ginger paste, 2 tbsp soy sauce, 2 tsp sesame oil
  • Bring the soup to a simmer, and simmer uncovered for 10 minutes.
  • Ladle into bowls, garnish as desired, and serve warm!

Notes

  • To make it heartier, you could spoon in some cooked white rice or white rice noodles.
  • Adjust the seasoning to fit your tastes.
  • You can sneak in other veggies if you like- mushrooms, broccoli, or bok choy would all be yummy!
