Ingredients

  • 2 pounds steak such as sirloin round steak

For The Marinade

  • 3 cloves garlic
  • 1 tbsp ancho chile powder
  • 2 tbsp olive oil
  • 2 tsp ground cumin
  • 1 tbsp dried oregano
  • salt and pepper to taste
  • 3 tbsp adobo sauce

For The Homemade Adobo Sauce (Optional)

  • 3 tablespoons tomato sauce
  • 1 tablespoon cider vinegar
  • 1 teaspoon smoked paprika
  • 1 tsp cayenne powder
  • 1 tsp garlic powder
  • pinch oregano powder
  • salt to taste

Instructions

  • If making homemade adobo sauce, add all of the ingredients to a small mixing bowl and whisk together until evenly combined. Set aside.
3 tablespoons tomato sauce, 1 tablespoon cider vinegar, 1 teaspoon smoked paprika, 1 tsp cayenne powder, 1 tsp garlic powder, pinch oregano powder, salt
  • Add the garlic and salt to a mortar and pestle, then crush. Add the remaining marinade ingredients and keep crushing until it’s all combined.
3 cloves garlic, 1 tbsp ancho chile powder, 2 tbsp olive oil, 2 tsp ground cumin, 1 tbsp dried oregano, salt and pepper to taste, 3 tbsp adobo sauce
  • Place steak in a bowl and put the sauce on top, let it marinade at least 20 mins at room temperature or in the fridge at least 2 hours.
2 pounds steak such as sirloin
  • Bring the steak to room temperature for at least 30 minutes before cooking.
  • In a large skillet over medium-high heat, heat 3 tablespoons olive oil until shimmering. Add marinated steak to the skillet and cook until medium-rare, stirring as needed. Transfer it to a cutting board and chop into small pieces.
  • Serve warm with desired toppings.

Notes

  • You don't necessarily need to make the adobo sauce from scratch but it is super tasty. If you prefer to substitute it, you could buy a can of chipotle peppers in adobo sauce from the Mexican section at the grocery store and use about 3 tablespoons of the sauce from the peppers.
  • Medium rare steak will have a warm red center and be between 130 and 135 degrees. Medium steak strips will have a pink center and thicker brown edges and be between 135 and 145.
  • If you plan to marinate the steak for more than 20 minutes, you need to put in the fridge. If you put it in the fridge you can marinate it for up to a full day prior to cooking it. Just make sure to let it come up to room temperature prior to cooking.
