Hard Boiled Egg BLT Bites
Hard boiled egg blt bites are a protein packed, lower carb alternative to the classic sandwich. These bites make a yummy and satisfying make ahead lunch or appetizer.

- 6 hard boiled eggs halved in the middle
- 2 slices thick cut bacon cooked crisp and broken into 1 inch pieces
- 3 sliced cheddar cheese quartered
- lettuce
- thinly sliced roma tomatoes
- mayonnaise
- mustard
- salt & freshly cracked black pepper to taste
Take the bottom half of an egg and top it with a piece of lettuce, a thin tomato slice, a quarter of the cheese, and finally a piece of bacon.
Top the piece of bacon with a small squirt of mustard and a tiny dollop of mayo.
Add the top half of the boiled egg to close the egg bite. Pierce it with a toothpick down the center to hold everything together.
Season with a little salt and freshly cracked black pepper, then transfer the hard boiled egg bite to a plate or platter.
Repeat until all the BLT egg bites have been assembled.

- For a zestier take, you could skip the mayo and mustard and use horseradish or a chipotle sauce instead.
