Hard boiled egg blt bites are a protein packed, lower carb alternative to the classic sandwich. These bites make a yummy and satisfying make ahead lunch or appetizer.
While I am all about indulgent comfort food, every once in awhile it’s nice to lighten things up.
One of the easiest ways to do that for me is skip the bread at lunch.
And a favorite lunch and brunch staple is definitely a BLT sandwich.
With these hard boiled BLT egg bites, I can have all the flavors but cut the carbs and calories a bit.
Ingredients
To make these you’ll need:
- Hard boiled eggs– Cut in half in the middle
- Bacon– Thick cut bacon, cooked crisp and broken into pieces
- Cheese– Sliced cheddar cheese cut into quarters
- Lettuce – I recommend either green leaf, butter, or romaine varieties
- Tomatoes– Thinly sliced
- Condiments– Mayonnaise and mustard
- Salt and pepper
How to Make
These blt bites are a snap to make!
To do it, top the bottom half of an egg with a piece of lettuce, a thin tomato slice, a quarter of the cheese, and finally a piece of bacon.
Add a dollop of mayo and mustard on top of the bacon if desired.
Close the egg bite by putting the top half of the boiled egg on.
Stick a toothpick down the center to hold everything together.
Season with a little salt and freshly cracked black pepper, then transfer the hard boiled egg bite to a plate or platter.
Repeat until all the BLT egg bites have been assembled.
Serve and enjoy!

Yes!
BLT egg bites make a delicious grab and go option if you prep the eggs and bacon ahead of time.
Store them separately, and assemble when ready to eat.
Variations
BLT egg bites are only one idea for a yummy low carb appetizer or lunch.
Try these variations:
- Chicken Caesar – Use a thin piece of grilled chicken, a thick slice of Parmesan cheese, and a lettuce leaf with a dab of your favorite caesar dressing. You could still use the bacon, or omit it in this version.
- Breakfast Version – Use a quarter of a cooked sausage patty and sliced cheese with mustard.
- Chicken Club – Add a piece of thinly sliced deli chicken meat to the original egg bite stack.
How Many Does This Serve?
As written this recipe serves 2 with 3 egg bites per person.
However, this recipe is easy to double or even triple as needed.
Tips and Tricks
- I find making hard boiled eggs in the oven gives you perfect eggs each time..
- Mashed and seasoned avocado makes a delicious and healthier alternative to using mayonnaise.
- For a zestier take, you could skip the mayo and mustard and use horseradish or a chipotle sauce instead.

Hard Boiled Egg BLT Bites
Ingredients
- 6 hard boiled eggs halved in the middle
- 2 slices thick cut bacon cooked crisp and broken into 1 inch pieces
- 3 sliced cheddar cheese quartered
- lettuce
- thinly sliced roma tomatoes
- mayonnaise
- mustard
- salt & freshly cracked black pepper to taste
Instructions
- Take the bottom half of an egg and top it with a piece of lettuce, a thin tomato slice, a quarter of the cheese, and finally a piece of bacon.
- Top the piece of bacon with a small squirt of mustard and a tiny dollop of mayo.
- Add the top half of the boiled egg to close the egg bite. Pierce it with a toothpick down the center to hold everything together.
- Season with a little salt and freshly cracked black pepper, then transfer the hard boiled egg bite to a plate or platter.
- Repeat until all the BLT egg bites have been assembled.
- Serve & enjoy!
