Mini Goat Cheese Balls

Mini goat cheese balls are an easy to make, elegant appetizer. Your guests will never know you didn't spend a ton of time and energy making these pretty, tasty bites!

Ingredients

  • 8 oz goat cheese softened
  • 4 oz cream cheese softened
  • 2 green onions thinly sliced
  • 1 1/2 tbsp Italian parsley finely chopped
  • 1/4 tsp freshly ground black pepper
  • 1 cup garlic croutons
  • 12 pretzel sticks

Instructions

  • To a mixing bowl add the softened goat cheese, softened cream cheese, green onions, one tablespoon of the chopped parsley, and the freshly ground black pepper.
  • Using a hand mixer, whip the ingredient together until the mixture's smooth and evenly combined.
  • Using a small cookie scoop, scoop an even scoop of the mixture. Roll it, between clean hands, into a ball then transfer it to a clean sheet or parchment paper. Repeat until all the cheese mixture's been formed into cheese balls.
  • Add the croutons to a blender, or food processor, and pulse until they're finely ground.
  • Transfer the ground crouton crumbs to a small mixing bowl. Add the remaining parsley, and stir together until evenly combined.
  • Working with one cheese ball at a time, roll it in the bowl of seasoned bread crumbs until evenly coated. Place the mini cheese ball onto a waiting serving tray. Repeat until all the mini cheese balls are coated and on the serving tray.
  • Stick a pretzel stick into the top center of each mini goat cheese ball.
  • Serve & enjoy!

Notes

  • Letting the cream cheese and goat cheese come to room temperature on the counter makes this so much easier to make because the cheese is much easier to work with.
  • You can jazz these up even more with other fresh chopped fresh herbs or even a hint of garlic.
  • Feel free to skip the pretzel sticks if desired.
