Skillet Ravioli Lasagna

Skillet ravioli lasagna is an easy one pot meal that turns premade ravioli into a cheesy comforting dish layered with sauce and cheese. This short cut lasagna will be everyone's favorite easy weeknight dinner!

Ingredients

  • 2 tbs extra virgin olive oil
  • 1 lb ground sausage
  • 1/2 yellow onion peeled & diced
  • 2 1/2 tsp minced garlic
  • 32 oz jar spaghetti sauce
  • 1 tbsp tomato paste
  • 1 1/2 cups chicken broth
  • 2 9 oz pkgs refrigerated cheese ravioli
  • 8 oz mozzarella cheese shredded
  • 1/2 cup shredded Parmesan cheese

Instructions

  • Add the olive oil to a large skillet, or Dutch oven, set over medium heat. When the oil's hot add the onions, stirring occasionally, until soft. Stir in the garlic and cook for 60 seconds.

  • Add the meat to the skillet and break it up until completely browned.

  • Add the sauce, paste, broth, and ravioli to the skillet- stirring to combine. Bring the mixture to a boil, then immediately reduce the heat to a simmer over medium heat. Simmer for 15-20 minutes- until the sauce has reduced and thickened and the pasta's tender.
    32 oz jar spaghetti sauce, 1 tbsp tomato paste, 1 1/2 cups chicken broth, 2 9 oz pkgs refrigerated cheese ravioli
  • Add most of the mozzarella cheese and all of the Parmesan cheese, stirring to combine.
    8 oz mozzarella cheese, 1/2 cup shredded Parmesan cheese
  • Remove the skillet from heat and top with the rest of the shredded mozzarella. Let the skillet rest until the cheese has melted.
  • Serve warm & enjoy!

Notes

  • You can substitute ground beef for the ground sausage or use a 50/50 mixture of the two.
  • Add a pinch of crushed red pepper flakes for some spice.
  • Have frozen ravioli? You can use it in this, but will take double the amount of time to cook.
  • You could use beef ravioli if that's your preference.
  • For some creaminess, stir in a scoop of ricotta along with the other cheeses called for.
