Air Fryer Greek Chicken And Veggies

Ingredients

  • 1 lb chicken tenderloins
  • 1/4 cup extra virgin olive oil
  • 2 tbsp white wine vinegar
  • 2 tbsp lemon juice
  • 1 tbsp minced garlic
  • 1 tbsp Greek seasoning
  • 1 tsp salt
  • 1/2 tsp pepper
  • 1 large zucchini chopped
  • 1 small red onion peeled & diced, or sliced into wedges
  • 1 cup grape tomatoes
  • 1/2 cup crumbled feta cheese

Instructions

  • Add the chicken to a large ziplocking bag, then set it aside.
    1 lb chicken tenderloins
  • Add the oil, vinegar, lemon juice, garlic, and seasonings to a small bowl. Whisk them together until evenly combined.
    1/4 cup extra virgin olive oil, 2 tbsp white wine vinegar, 2 tbsp lemon juice, 1 tbsp minced garlic, 1 tbsp Greek seasoning, 1 tsp salt, 1/2 tsp pepper
  • Pour half the marinade over the chicken then seal the bag, squeezing out the excess air as you do. Lay the marinating chicken flat in the fridge and chill for 1 hour, flipping 1/2 way through.
  • Add the vegetables to a mixing bowl, pour the remaining marinade evenly over top, and gently toss until everything's evenly coated. Set aside.
    1 large zucchini, 1 small red onion, 1 cup grape tomatoes, 1/2 cup crumbled feta cheese
  • Transfer the marinaded chicken to the basket of an air fryer and cook at 400° for 7 minutes.
  • Flip the chicken, add the vegetables to the basket and cook for another 7-8 minutes- just until the chicken reaches an internal temperature of 165°.
  • Plate and serve warm, topped with crumbled feta cheese.

Notes

  • You can marinate the chicken for up to 8 hours so you can get it together in the morning and be ready to pop it in the air fryer later that evening.
  • Serve it with fresh lemon for squeezing over it if desired.
  • Adjust the veggies to suit your taste and skip any you don't like.
