  • 5 tbsp butter melted
  • 1 tsp Italian seasoning
  • 2-3 tbsp freshly chopped parsley leaves

  • Season the chicken liberally with salt and pepper, and some smoked paprika on both sides. Set aside.
4 boneless, skinless chicken breasts, salt, freshly cracked black pepper, smoked paprika
  • Heat the olive oil in a cast iron skillet over medium high heat.
2 tbsp extra virgin olive oil
  • While the oil's heating whisk the butter, Italian seasoning, parsley, and garlic together in a small bowl until evenly combined. Set aside.
5 tbsp butter, 1 tsp Italian seasoning, 2-3 tbsp freshly chopped parsley leaves, 4 tsp minced garlic
  • Add the chicken to the hot oil, bottom side down. Sear for 1-2 minutes, then flip and sear the other side for the same amount of time- just until golden brown, but not cooked through.
  • Remove the skillet from heat, and spoon the garlic butter sauce evenly out overtop of the chicken. Bake the chicken for 20-25 minutes, just until cooked through (165°).
  • Carefully remove the chicken from the oven and let it rest for 5 minutes. Spoon the garlic butter back over the chicken, then serve, and enjoy!

Notes

  • I'm not usually a big proponent of preheating, but for this recipe it's a must so the chicken cooks properly.
  • Using a cast iron skillet for this chicken is also HIGHLY recommended to get the best proper sear on the chicken.
  • You can adjust the amount of seasonings to suit your taste.
  • I highly recommend finishing the dish with some Parmesan cheese sprinkled on top.
