Preheat the oven to 400°.
Season the chicken liberally with salt and pepper, and some smoked paprika on both sides. Set aside.
4 boneless, skinless chicken breasts, salt, freshly cracked black pepper, smoked paprika
Heat the olive oil in a cast iron skillet over medium high heat.
2 tbsp extra virgin olive oil
While the oil's heating whisk the butter, Italian seasoning, parsley, and garlic together in a small bowl until evenly combined. Set aside.
5 tbsp butter, 1 tsp Italian seasoning, 2-3 tbsp freshly chopped parsley leaves, 4 tsp minced garlic
Add the chicken to the hot oil, bottom side down. Sear for 1-2 minutes, then flip and sear the other side for the same amount of time- just until golden brown, but not cooked through.
Remove the skillet from heat, and spoon the garlic butter sauce evenly out overtop of the chicken. Bake the chicken for 20-25 minutes, just until cooked through (165°).
Carefully remove the chicken from the oven and let it rest for 5 minutes. Spoon the garlic butter back over the chicken, then serve, and enjoy!
