Baked Pork Chops With Stuffing And Apples

- 6 boneless pork chops 1/2" thick
- 1 6 oz box stovetop stuffing sage flavor
- 1 large granny smith apple diced
- 1 large yellow onion peeled & diced
- 8 little potatoes halved & parboiled
- 1 1/2 tsp garlic powder
- 1 tsp smoked paprika
- 1 tsp onion powder
- 1/2 tsp dried rosemary
- 1/2 tsp dried thyme leaves
Spray a large 9x13" casserole dish with nonstick cooking spray. Add the apples, onion, and potatoes to the dish in an even layer.

Add the seasonings to a small prep bowl and whisk them together until evenly combined. Set aside.

Pat the pork chops dry with paper towels, then season them liberally on all sides by rubbing the seasoning mixture in. Transfer the pork chops to the dish arranging them evenly out on top of the vegetable mixture.

Prepare the stuffing per the package directions, then evenly divide it and spoon it on top of the pork chops.
1 6 oz box stovetop stuffing
Spray a large sheet of foil with nonstick cooking spray and the cover the dish tightly, sprayed side down and sealing all edges.
Bake at 425° for 30 minutes. Carefully remove the foil then continue baking another 5-10 minutes.

- Prepping the casserole dish by spraying with nonstick spray is optional, but highly recommended since it leads to easier cleanup later.
- Be sure to use 1/2" thick but boneless pork chops as thinner ones will cook quicker making them chewy and dry by the time the potatoes are tender.
- There's no need to peel the apple before using it in this dish, but if peels are a no go then feel free.
- Don't skip parboiling the potatoes as it will yield raw crunchy potatoes when the dish is done baking.
