Banana Bread Cake Pops

Banana bread cake pops are a quick and easy treat with absolutely no baking skills needed! This recipe turns bakery muffins into a fun, bite sized treat everyone will love.

Ingredients

  • 18 Mini Banana Nut Muffins from the bakery
  • 1/4 cup Cream Cheese Frosting
  • 1 lb Vanilla Almond Bark
  • 1 cup Crushed Walnuts
  • Cake Pop Sticks
  • Parchment Paper

Instructions

  • Start by adding mini muffins and cream cheese frosting to a stand mixer.
    18 Mini Banana Nut Muffins, 1/4 cup Cream Cheese Frosting
  • Mix on high until well combined, and the consistency of play dough.
  • Use a cookie scoop to remove dough and roll into a ball. Keep them even and smooth, as shown.
  • Place in the fridge for one hour. You want to dip them chilled.
  • Place your almond bark in the microwave. Microwave in one minute intervals, stirring after each, until smooth.

  • Process your walnuts until fine, and place in a bowl.
    1 cup Crushed Walnuts
  • Dip the end of a cake pop stick in chocolate and push into the center of your cake ball. Let chocolate set.

  • Once the chocolate is set, dip the rest of the cake pop in chocolate and shake off the excess.
  • Immediately roll in walnuts and set on parchment paper to set.

  • Once hardened, serve and enjoy. The perfect combo of banana bread, cream cheese, and chocolate!

Notes

  • Don't overcook the almond bark. You want to heat it in short intervals and stir after each one to make sure the bark melts without scorching. If it scorches, the bark will seize up, get clumpy, and just generally taste bad.
  • Make sure to let the cake balls chill before you dip them in the melted chocolate. It will be easier to work with if you do.
  • No almond bark? You could also melt white chocolate chips and stir in a teaspoon of coconut oil for a similar coating.
