  • 1 tbsp baking powder
  • 1/2 tsp salt
  • 1/2 tsp pepper
  • 1/2 tsp paprika

  • 1/4 cup sweet chili sauce
  • 1 tbsp honey
  • 1-2 tsp sriracha sauce
  • pinch salt optional

Instructions

  • Add a wire rack to a large rimmed baking sheet. Set side.
  • Add the seasonings to a large mixing bowl and whisk together until evenly combined.
1 tbsp baking powder, 1/2 tsp salt, 1/2 tsp pepper, 1/2 tsp paprika
  • Pat the chicken dry, then add it to the seasoning bowl, and toss until evenly coated.
    2-3 lbs chicken wings
  • Transfer the seasoned wings to the rack in an even layer, then refrigerate them (uncovered) for 12-24 hours.
  • Take the wings out of the refrigerator and put them directly into a hot oven and bake them at 425° for 30-35 minutes, until golden brown and very crispy.
  • Add all of the sauce ingredients to a small bowl, then whisk them together until evenly combined. Set aside.
1/2 cup mayonnaise, 1/4 cup sweet chili sauce, 1 tbsp honey, 1-2 tsp sriracha sauce, pinch salt
  • Transfer the warm wings to a clean mixing bowl. Pour the sauce overtop of them, then gently toss until the wing's are evenly coated.
  • Serve immediately and enjoy!

Notes

  • Don't skip patting the chicken wings dry, or the chill time, both are integral to the skin getting extra crispy.
  • The baking powder is also key to the crispy skin. Don't skip it!
  • Taste the bang bang sauce before you add salt or more sriracha. You may find it is salty enough on its own and spicy enough already.
