Add a tablespoon of sesame oil to a large Dutch oven, or other heavy bottomed soup pot, set over medium high heat.
1 tbsp sesame oil
Add the beef, onion, garlic, ginger, salt, and pepper to the pot. Cook, stir frying, until the beef's crumbled and cooked through. Strain off all excess grease.
1 lb lean ground beef, 1 yellow onion, 3 tsp minced garlic, 1 tbsp ginger paste, salt & pepper
To the meat mixture add the broth, soy sauce, rice vinegar, and sriracha. Stir to combine.
6 cups beef broth, 1/4 cup low sodium soy sauce, 2 1/2 tbsp seasoned rice vinegar, 2 tsp sriracha
Bring the soup to a boil, then immediately reduce the heat to a gentle simmer and cook for 5 minutes.
Add the ramen noodles and broccoli to the pot, stirring to incorporate. Simmer for 3-5 minutes, just until the noodles are soft and the broccoli is tender.
3 3 oz pkg ramen noodles, 3 cups fresh broccoli florets
Remove the pot from heat and stir in the sesame oil.
1 tsp sesame oil
Serve warm & enjoy!
