BLT Chicken Salad
BLT chicken salad is a creamy, flavor packed filling for any sandwich or wrap. Tender chicken gets tossed in a creamy mayonnaise based dressing with crispy crumbled bacon, halved cherry tomatoes and a blend of seasoning. Lunch is ready!

- 4 cups diced rotisserie chicken
- 1 lb bacon cooked crisp & crumbled
- 1 1/2 cups halved cherry tomatoes
- 1 bunch green onions thinly sliced
- 2 stalks celery finely diced
- 1/2 - 3/4 cup mayonnaise
- 1 tbsp lemon juice optional
- 1/2 tsp salt
- 1/2 tsp garlic powder
- 1/2 tsp onion powder
- 1/4 tsp black pepper
Add the chicken, bacon, tomatoes, onion, and celery to a large mixing bowl. Toss together until evenly combined.
4 cups diced rotisserie chicken, 1 lb bacon, 1 1/2 cups halved cherry tomatoes, 1 bunch green onions, 2 stalks celery
To a separate smaller bowl add the remaining ingredients. Whisk them together until evenly combined.
1/2 - 3/4 cup mayonnaise, 1 tbsp lemon juice, 1/2 tsp salt, 1/2 tsp garlic powder, 1/2 tsp onion powder, 1/4 tsp black pepper
Scrape the dressing into the bowl with the chicken mixture, then stir together until evenly combined. If it's too dry for you, add a bit more mayonnaise.
Serve and enjoy, or cover and chill for up to 2 hours before serving.
- Adjust the seasoning to suit your taste.
- Not a fan of celery? No problem! Just skip it! The same goes for the onions.
- If the cherry tomatoes are on the large side, you'll want to quarter them instead of halve them.
