Breakfast Grilled Cheese

If you thought grilled cheese was only for lunch or dinner- think again. These breakfast grilled cheese sandwiches feature a full breakfast in an easy, grab and go package. Make them the night before, and you've got a hearty breakfast the kids will love that takes no time at all to prepare on busy mornings.

Ingredients

  • 4 large eggs
  • 2 tbsp cream can sub whole milk
  • 1/2 lb breakfast sausage
  • salt and pepper to taste
  • 4 large slices sourdough bread
  • 2-3 tbsp butter
  • 4 slices colby jack cheese
  • 4 slices sharp cheddar cheese

Instructions

  • Beat the eggs with the cream and set aside
    4 large eggs, 2 tbsp cream
  • Brown the breakfast sausage, breaking up into pieces as it cooks
    1/2 lb breakfast sausage
  • Remove the sausage, leaving the pan with some of the oil, then add eggs to the same pan and cook until just set, add salt and pepper to taste

  • Generously butter the bread, then place two slices butter side down onto a large skillet over medium heat
    4 large slices sourdough bread, 2-3 tbsp butter
  • Assemble the sandwich by adding two slices of cheese, followed by the egg and sausage, then another two slices of cheese on top.
    4 slices colby jack cheese, 4 slices sharp cheddar cheese
  • Top with the bread, butter side up
  • Cook over medium heat until the cheese is melted and the bread is toasted, flip and repeat for the other side.

Notes

  • Don't overcook the eggs! You don't want them to be dry. When just set, remove the skillet from heat and let the residual heat finish firming up the eggs.
  • For best results, use more than one kind of cheese that melts well. Other options include havarti, mozzarella, muenster, and gouda. Steer clear of yellow American cheese though.
  • Worried about flipping this hearty grilled cheese? Keep it together using two wide spatulas, one holding each side, and flip carefully but swiftly.
