Peel and dice the potatoes then add them to a large mixing bowl. Add the oil, garlic, paprika, salt and pepper. Toss everything together until evenly combined.
4-5 medium russet potatoes, 2 tbsp extra virgin olive oil, 1/2 tbsp garlic powder, 1 tsp smoked paprika, salt and pepper
Transfer the seasoned potatoes to the basket of an air fryer and cook at 400° for 20 minutes, shaking them to toss at the halfway point. Set aside.
Add the chicken and Italian seasoning to a small bowl and toss to evenly combine. Set aside.
2 large chicken breasts, 1 tsp Italian seasoning
Melt the butter in a large oven safe skillet set over medium high heat. Add the chicken and cook, stirring often, until cooked through.

Add the potatoes and garlic sauce to the skillet then stir everything together until evenly combined. Spread out in an even layer.
Sprinkle the shredded cheese evenly out overtop.
1 1/2 cups garlic Parmesan sauce, 1 cup shredded mozzarella cheese
Bake at 400° for 20-25 minutes, until hot and bubbly and the cheese is golden brown.
Carefully remove the hot skillet from the oven and let it rest for 5 minutes.
