Cheesy Garlic Parmesan Chicken And Potatoes Skillet

This cheesy garlic parmesan chicken and potatoes skillet is an easy dinner made simple thanks to garlic Parmesan sauce and a few basic ingredients. This whole family friendly dinner can be on your table in just about half an hour, making it perfect for a busy day.

Ingredients

  • 2 large chicken breasts trimmed of fat & diced
  • 4-5 medium russet potatoes washed & scrubbed
  • 2 tbsp extra virgin olive oil
  • salt and pepper to taste
  • 1/2 tbsp garlic powder
  • 1 tsp smoked paprika
  • 2 tbsp butter
  • 1 tsp Italian seasoning
  • 1 1/2 cups garlic Parmesan sauce
  • 1 cup shredded mozzarella cheese

Instructions

  • Peel and dice the potatoes then add them to a large mixing bowl. Add the oil, garlic, paprika, salt and pepper. Toss everything together until evenly combined.
    4-5 medium russet potatoes, 2 tbsp extra virgin olive oil, 1/2 tbsp garlic powder, 1 tsp smoked paprika, salt and pepper
  • Transfer the seasoned potatoes to the basket of an air fryer and cook at 400° for 20 minutes, shaking them to toss at the halfway point. Set aside.
  • Add the chicken and Italian seasoning to a small bowl and toss to evenly combine. Set aside.

  • Melt the butter in a large oven safe skillet set over medium high heat. Add the chicken and cook, stirring often, until cooked through.

  • Add the potatoes and garlic sauce to the skillet then stir everything together until evenly combined. Spread out in an even layer.
  • Sprinkle the shredded cheese evenly out overtop.
    1 1/2 cups garlic Parmesan sauce, 1 cup shredded mozzarella cheese
  • Bake at 400° for 20-25 minutes, until hot and bubbly and the cheese is golden brown.
  • Carefully remove the hot skillet from the oven and let it rest for 5 minutes.
  • Serve warm and enjoy!

Notes

  • Don't have an air fryer? Spread the potatoes out onto a sheet pan lined with foil and bake them for about 25 minutes at 400. During that time, prep the rest of the recipe as directed and finish the same way you would with air fryer potatoes.
  • You could make this with baby potatoes or red potatoes and skip peeling. Just quarter the potatoes instead.
  • Don't skip the rest time. The cheese and sauce need a chance to set a bit before you serve it.
