Cheesy Hashbrown Casserole With Ground Beef

Cheesy hashbrown casserole with ground beef is a hearty combination of meat and potatoes perfect for dinner anytime. Hashbrowns and ground beef bake together in a rich, creamy sauce and get topped with cheese. Dinner is done!

Ingredients

  • 1 1/2 lbs lean ground beef
  • 1/2 cup diced yellow onion
  • 1 20 oz bag refrigerated shredded hashbrowns
  • 1/4 cup melted butter
  • salt & pepper to taste
  • 1 10.75 oz can condensed cream of chicken soup
  • 1 cup sour cream
  • 2 cups shredded cheddar cheese

Instructions

  • Add the ground beef and onion to a large skillet set over medium heat. Cook and crumble the beef until completely browned. Strain to remove all excess grease. Set aside.

  • Add the butter, soup, and sour cream to a large mixing bowl then stir together until evenly combined. Season with salt & pepper.

  • Add the cooked ground beef, hashbrowns, and one cup of cheese to the bowl then stir everything together until evenly combined.
    1 20 oz bag refrigerated shredded hashbrowns, 2 cups shredded cheddar cheese
  • Spray a 9x13" baking dish with nonstick cooking spray. Transfer the hashbrown mixture to the dish and spread it out in an even layer. Sprinkle the rest of the cheese evenly out overtop.
  • Bat at 350° for 35 minutes, or until the edges are hot and bubbly and the cheese has melted.
  • Serve warm & enjoy!

Notes

  • Make sure you are using lean ground beef. If you buy the 73 percent kind, your beef will be very greasy and cook down too much.
  • You could add more veggies into this by dicing up a green pepper and adding that to the beef and onions while you brown the beef.
  • If you wanted to add more seasoning, you could season the beef with a little garlic powder and smoked paprika.
