- 1 lb ground beef
- 1 1 oz pkt Taco Bell taco seasoning
- 8 oz pepper jack cheese shredded
- 8 oz cheddar cheese shredded
- 8-10 flour tortillas
- 1 cup pico de gallo
Cook the ground beef until completely browned and crumbled. Drain, then return the meat to the skillet.

Add the taco seasoning mix, along with the water called for on the package, and cook per the package instructions.

Divide the cheddar cheese evenly between the flour tortillas in an even layer.
8 oz cheddar cheese, 8-10 flour tortillas
Divide the beef evenly between the tortillas.
Top with the pepper jack cheese followed by a bit of pico on each.

Roll up and wrap the tortillas in damp paper towels.
Heat in the microwave, 2 at a time, for 1 minute. Repeat until all the tortillas have been cooked.

- You can use ground chicken or turkey instead of beef if you prefer though it won't be as spot on as ground beef.
- Serve these with your favorite extras like guacamole and sour cream.
- Customize these to your liking! For example skip the pico if you don't like it and sub taco sauce or use a chunky salsa instead.
