Creamy Cucumber Salad

Creamy cucumber salad is an easy refreshing side dish for any barbecue or picnic. Thinly sliced cucumbers and red onions get tossed in a tangy sour cream based dressing.

Ingredients

  • 1/2 cup sour cream
  • 2 tbsp lemon juice
  • 1/2 tsp dried dill
  • 1 tsp sugar
  • 1/2 tsp salt
  • 1 large cucumber thinly sliced
  • 1/4 - 1/2 red onion thinly sliced

Instructions

  • Add the sour cream, lemon juice, sugar, dill, and salt to a small mixing bowl then whisk them together until evenly combined.

  • Add the cucumbers and onion to another bowl, gently tossing them together until evenly mixed.
    1 large cucumber, 1/4 - 1/2 red onion
  • Pour the dressing over the vegetables and toss together until everything's evenly coated.
  • Let the salad rest for 10 minutes, stir, then serve and enjoy!

Notes

  • Peeling, or not peeling, the cucumbers is totally up to your preference.
  • You have options to customize this salad! Substitute Greek yogurt for the sour cream, use white onion in place of red, or even add halved cherry tomatoes if you want!
  • This recipe can be double or tripled, as needed, if feeding a crowd.
