- 2 1/2 cups chopped rotisserie chicken
- 3 celery stalks diced
- 2 cups fresh baby spinach
- 1 cup chopped marinated artichoke hearts
- 3/4 cup mayonnaise
- 2-3 tbsp sour cream
- 1 tsp garlic powder
- 1 tsp onion powder
- salt & pepper to taste
Add all of the ingredients to a large mixing bowl, then stir them together until evenly combined.

Serve as a dip with assorted crackers, or as a sandwich filling.

- Adjust the seasoning to your preferences.
- If you want to add a little cheese action like you'd find in the dip, stir in a half cup or so of parmesan cheese.
- You don't want to use spinach that is not baby spinach. Regular spinach has tougher, thicker stalks. And frozen spinach is too watery when it is thawed for this dip.
