Crispy Air Fryer Breakfast Potatoes

Air fryer breakfast potatoes are a deliciously crispy version of home fries. This breakfast classic is perfect with eggs and bacon.

Ingredients

  • 2-3 medium russet potatoes
  • 1 1/2 - 2 tbsp extra virgin olive oil
  • salt & pepper to taste
  • 1 tsp smoked paprika
  • 1 tsp garlic powder
  • 1/2 tsp onion powder

Instructions

  • Wash & peel the potatoes, then pat them dry with paper towels.
  • Cut the potatoes into 1" cubes/chunks, and then add them to a mixing bowl.
  • Add the remaining ingredients to a mixing bowl, and then gently toss everything together until the potatoes are evenly coated.
  • Add the potatoes to the basket of your air fryer, and spread them out in an even layer.
  • Cook at 400° for 15-16 minutes, opening the basket and giving the potatoes a shake halfway through the cook time.
  • After 15 minutes, check for doneness. If fork tender and crispy outside, the potatoes are ready to serve. If not, continue cooking in 2 minute increments until fork tender.

Notes

  • You can adjust the seasonings to suit your liking.
  • Make sure to cut the potatoes into similar sized pieces so they cook evenly.
  • You don't have to peel them if you don't want to.
