Crispy Italian Herb Chicken Thighs
These crispy Italian chicken thighs bake up juicy on the inside with perfectly crunchy, seasoned skin and take almost no time to prepare. Quick prep and big flavor make them a go-to weeknight dinner for busy nights!

- 6 large bone in, skin on chicken thighs
- 6 tbsp extra virgin olive oil
- 2 tsp salt
- 2 tsp garlic powder
- 2 tsp onion powder
- 2 tsp Italian seasoning
- 1 tsp black pepper
- 1 tsp smoked paprika
Add all of the spices to a small mixing bowl and whisk together until evenly combined.

Rub the chicken thighs all over with half the olive oil, followed by the prepared spice blend.
6 large bone in, skin on chicken thighs, 6 tbsp extra virgin olive oil
Add the remaining olive oil to a large cast iron skillet set over medium high heat.
Once the oil's hot add the chicken to the skillet, skin-side down. Sear for 3-4 minutes, then flip and sear the other side for another 3-4 minutes- just until golden brown on each side.
Flip all the chicken thighs right side up and bake at 400° for 25-30 minutes.
Serve warm and enjoy!

- Feel free to adjust the seasoning to suit your taste.
- For a little extra flavor, squeeze on some lemon or sprinkle on Parmesan cheese right before serving.
