Ingredients

  • 1 32 oz jar sliced dill pickles drained with some juices reserved
  • 3/4 - 1 1/4 cup seasoned batter mix
  • Oil for frying

Instructions

  • Place drained pickle slices on a chopping board, then mince into small pieces
1 32 oz jar sliced dill pickles
  • Transfer chopped pickles to a bowl, then add ¾ cup of the batter mix to the bowl and stir. Add more batter mix or pickle juice until the pickles are coated in a smooth, batter about the consistency of pancake batter
    3/4 - 1 1/4 cup seasoned batter mix
  • To a large heavy bottom pan, add oil until it is about ½” deep. Heat over medium heat and once hot drop 2 tablespoon scoops of batter into the oil and use the back of the spoon to flatten slightly.
    Oil
  • Cook 2-3 minutes, then flip and cook an additional 2-3 minutes on the other side, or until lightly golden on both sides and cooked through.
  • Remove to a paper towel lined plate and repeat until all batter is used
  • Serve warm with ranch for dipping

Notes

  • Don't overcrowd your frying pan. This will drop the temperature of the oil and lead to uneven cooking.
  • The batter should be the consistency of pancake mix. You may need to add some pickle juice or extra batter mix to reach the right consistency.
  • These are delicious with ranch! You could also dip them into marinara sauce.
