Easy Chicken Meatballs

Easy chicken meatballs are a quick, versatile dinner option you can customize to fit your family's tastes. With only 5 ingredients and ready in 30 minutes, these are a lifesaver on busy nights when you just don't know what to make.

Ingredients

  • 1 lb ground chicken
  • 1 large egg
  • 1/2 cup panko bread crumbs
  • 1/2 tsp salt
  • 1/2 tsp pepper

Instructions

  • Line a baking sheet with foil, spray it with nonstick cooking spray, then set it aside.
  • Add all of the ingredients to a large mixing bowl. Using clean hands, or a rubber spatula, mix everything together just until evenly combined. Don't overmix or the meatballs will be tough, not tender.
    1 lb ground chicken, 1 large egg, 1/2 cup panko bread crumbs, 1/2 tsp salt, 1/2 tsp pepper
  • Roll into 18-20 roughly even meatballs and arrange them on the prepared baking sheet in rows spaced evenly apart.
  • Bake at 400° for 18-20 minutes, or until cooked through and lightly crisped/golden brown on the outside.
  • Use immediately, or cool and freeze.

Notes

  • You can air fry these meatballs. To do it, spray the basket with nonstick cooking spray and add the meatballs in a single layer with space in between them all. Spray them lightly with oil. Air fry at 400F for 10 minutes. Flip and spray again. Then continue cooking for another 5-7 minutes. Repeat for the rest of the meatballs.
  • Don't overmix the meat or the meatballs will be tough, not tender.
  • You can add so many flavors to these! If you want an Italian spin, add a teaspoon or so of Italian seasoning blend and some fresh, pressed or minced garlic. For a southwest flair, add some chili powder, cumin, and paprika. The sky's the limit!
