Fajita Chicken Salad
Fajita chicken salad is a zesty Southwestern take on the traditional sandwich filling. Fajita season, diced bell peppers, and diced red onion dress up the mayonnaise based salad.

- 4 cups chopped rotisserie chicken
- 3/4 - 1 cup mayonnaise
- 1 1/4 tbsp fajita seasoning
- 1 small orange bell pepper seeded & diced
- 1 small yellow bell pepper seeded & diced
- 1/2 small red onion finely diced
- 1/2 cup chopped fresh cilantro leaves
Add all of the ingredients to a medium mixing bowl. Stir everything together until evenly combined.

- You can use your own blend of fajita spices instead of the premade fajita seasoning or taco seasoning. Just mix 1/4 teaspoon salt, 1/4 teaspoon pepper, 1 teaspoon chili powder, 1/2 teaspoon cumin, 1/2 teaspoon garlic powder, and 1/2 teaspoon onion powder together.
- If you are using the cilantro, make sure you rinse all the grit away and dry the leaves well.
- For a little zip, you could add a diced seeded jalapeno.
