Fish Stick Sandwiches
Give traditional frozen fish sticks a new spin by turning them into these yummy fish finger sandwiches. With flavors similar to McDonald's filet o fish, they're an easy sandwich that even picky eaters will enjoy!

- 8 large frozen fish sticks the good sturdy kind
- 4 slices thick white sandwich bread
- 1/2 cup shredded lettuce
- 8 sliced dill pickle chips
- 1/2 cup tartar sauce
Cook the fish sticks according to the package directions. Set aside.

Spread a bit of the tartar sauce on the inside of two slices of bread. Divided the shredded lettuce evenly between the two halves, spreading evenly overtop.
4 slices thick white sandwich bread, 1/2 cup tartar sauce, 1/2 cup shredded lettuce
Add four crispy fish sticks to each sandwich, then top them each with four dill pickle chips.

Drizzle the remaining tartar sauce evenly out overtop. Top each sandwich with one of the remaining slices of bread to close.
Serve immediately with your favorite chips, and enjoy!
- I recommend using large, sturdy fish sticks for these sandwiches- for example Costco's Triton brand. If you have to use smaller fish sticks then you may need to use more per sandwich to get the same coverage.
- If your kids like cheese on their sandwich, then you can add a slice of American cheese. Lay it overtop the fish sticks when assembling your sandwiches.
- Not a fan of pickles? Skip them! Similarly, if you don't like tartar sauce then just spread mayo on the bread instead.
