Ingredients

  • 1 lb shrimp pat dry and minced into ¼” pieces
  • 1 ½ cups shredded mozzarella cheese
  • ½ cup almond flour or all purpose if not low-carb
  • ½ cup minced green pepper
  • 2 large eggs
  • 1 scallion minced
  • 1 tablespoon minced parsley
  • ½ teaspoon salt
  • ¼ teaspoon ground black pepper
  • Oil for frying

Instructions

  • In a large bowl, stir together the shrimp, cheese, almond flour, green pepper, eggs, scallion, parsley, salt, ground pepper until well combined
1 lb shrimp, 1 ½ cups shredded mozzarella cheese, ½ cup almond flour, ½ cup minced green pepper, 2 large eggs, 1 scallion, 1 tablespoon minced parsley, ½ teaspoon salt, ¼ teaspoon ground black pepper
  • To a medium skillet, add enough oil to completely coat the bottom, then heat over medium high heat.
    Oil for frying
  • Drop ¼ cup of mixture into the pan, then gently flatten to form patty shape. Allow to cook for 3-4 minutes, then carefully flip to cook the other side until cooked through, an additional 3-4 minutes.
  • Carefully remove to a paper towel lined plate and repeat with remaining shrimp mixture.
  • Serve with seafood sauce to dip

Notes

  • Depending on the size of your pan, you may be able to cook several at a time. Just don't overcrowd your pan.
  • If you are looking to make a low carb meal, serve them with a side of broccoli or bell peppers.
  • For some variety you can make or use different sorts of mayonnaise aioli for dipping. Chipotle or lime would both be yummy dipping options.
