Green Bean Almondine
Green bean almondine may sound (and taste) fancy, but it couldn't be easier to make! This tasty side is a classic addition fit for any meal- even special occasions!

- 1 lb french green beans
- 2 tbsp butter
- heaping 1/4 cup raw sliced almonds
- 2 medium shallots peeled & finely diced
- 2 garlic cloves finely minced or pressed
- zest of 1 small lemon
- 2 tsp fresh lemon juice
- salt & pepper to taste
Bring a heavily salted pot of water to a rolling boil. Add the green beans and cook for 4-5 minutes, stirring occasionally- just until crisp but still tender.

While the beans are cooking add the butter to a large skillet set over medium low heat. Once melted add the almonds and saute them, stirring often, until golden brown.

Reduce the heat to low and stir in the shallots and garlic, continue sautéing for 1-2 minutes- stirring often.

Transfer the beans to the skillet using tongs. Saute quickly, tossing to evenly combine, just until tender.
Add the zest and juice, tossing to evenly combine.

Season with salt and pepper to taste, and serve immediately.

- Use low heat to toast the almonds so they don't burn.
- If you can't find French green beans, then use any fresh green beans.
- Clean the beans first by snapping off or cutting off the ends.
