Homemade Thin Mint Cookies (Copycat Recipe)

- 26 oreo cookie halves 13 whole oreo cookies
- 1 1/2 cup semi sweet chocolate chips
- 1/2 tsp peppermint extract
Separate the Oreos and scrape off the middle cream. Set the cookies aside.

Combine chocolate chips and peppermint extract in a microwave safe bowl and every 20 seconds stir until completely melted.

Using a fork, dip the cookies into the melted chocolate, flip all around until heavily coated, scoop up the cookie making sure the cookie is upright, (top of the cookie facing up) tap the fork on the edge of the bowl, letting all the excess chocolate fall back into the bowl, make sure the cookie is smoothly coated after tapping a bunch.
Using another fork scrape the bottom of the cookie to remove any strings of chocolate.
Place on a tray lined with parchment paper and let sit for 1-2 hours until they are hardened. Enjoy!
- Tapping the excess chocolate off of the cookie also helps the chocolate smooth out on the cookie.
- Be careful not to over cook the chocolate. Chances are good that the chocolate chips will still be holding their shape a bit when they come out of the microwave before you stir them. When they are ready, stirring them will get them to melt into their smooth consistency.
- Freezing these makes them taste even better!
