Make sure the liner is in your Instant Pot then add the broth, water, oil, 2 tbsp of the lime juice, and rice to the bowl.
2 cups vegetable broth, 3/4 cups water, 2 tbsp canola oil, 3 tbsp lime juice, 2 cups long grain rice
Add the lid, turning to close, and set the vent valve to the 'sealed' position.
Press the 'rice' button to begin the cooking process.
After the rice is done, let it rest for 5 minutes- the carefully open the valve to quick release the remaining hot steam.
Carefully transfer the hot rice to a serving bowl, and fluff with a fork. Add the remaining ingredients to the rice, gently stirring to evenly combine.
