Instant Pot Italian Potatoes
Instant Pot Italian potatoes are an easy side dish you can throw together in under half an hour. With only 4 ingredients, this will be your new go to side for any chicken, fish, beef, or pork dinner.

- 2-3 lbs baby potatoes halved
- 1 1 oz pkt Italian dressing mix
- 1 cup chicken broth
- 1/2 cup freshly grated Parmesan can substitute shredded Parmesan cheese
Add the liner to your Instant Pot, followed by the potatoes.
2-3 lbs baby potatoes
Sprinkle the seasonings evenly out overtop, and gently toss to coat.
1 1 oz pkt Italian dressing mix
Pour the broth gently out overtop.
1 cup chicken broth
Add the lid, turning to close. Set the vent valve to the 'sealed' position.
Pressure cook on HIGH for 6 minutes, then carefully release the vent valve to perform a quick release.
Sprinkle the Parmesan cheese out over top, then gently stir to combine.
1/2 cup freshly grated Parmesan
Serve warm and enjoy!
- You can make these in the slow cooker. Just put everything except the cheese in the slow cooker and cook it on low for 5-6 hours or on high for 3-4. Stir the cheese in about 15 minutes before serving. The potatoes are done when they are fork tender.
- Add shredded mozzarella for extra cheesy potatoes.
- You can garnish these with freshly chopped parsley for a little color.
