Italian Grinder Chicken Salad

Ingredients

For The Salad

  • 2 cups chopped rotisserie chicken
  • 1/4 lb salami diced
  • 1/4 lb pepperoni diced
  • 1/4 lb sliced provolone diced
  • 1/4 cup crumbled feta cheese
  • 1 cup halved grape tomatoes
  • 1/3 cup mild sliced banana peppers
  • 1/2 cup red onion peeled & diced

For The Dressing

  • 1/2 cup mayonnaise
  • 1/4 cup shredded Parmesan cheese can substitute grated
  • 3 tbsp red wine vinegar
  • 2 tbsp banana pepper juice
  • 1 tsp dried oregano
  • 1 tsp garlic powder
  • salt & pepper to taste

Instructions

To Make The Dressing

  • Add all of the dressing ingredients to a mixing bowl and whisk together until evenly combined. Set aside.
    1/2 cup mayonnaise, 1/4 cup shredded Parmesan cheese, 3 tbsp red wine vinegar, 2 tbsp banana pepper juice, 1 tsp dried oregano, 1 tsp garlic powder, salt & pepper

To Make The Chicken Salad

  • Add all of the salad ingredients to a large mixing bowl and gently toss until evenly combined.
    2 cups chopped rotisserie chicken, 1/4 lb salami, 1/4 lb pepperoni, 1/4 lb sliced provolone, 1/4 cup crumbled feta cheese, 1 cup halved grape tomatoes, 1/3 cup mild sliced banana peppers, 1/2 cup red onion
  • Pour the dressing evenly out overtop, then gently toss until evenly combined.
  • Spoon the chicken salad mixture onto sub rolls, serve, and enjoy!

Notes

  • If you are using leftover chicken, only store the salad for up to 5 days after the chicken was originally cooked.
  • Substitute or omit any of the ingredients you don't like in the salad itself.
  • Taste the dressed salad before you season it with salt and pepper. The banana pepper brine adds salty flavor.
