Equipment

  • 6 inch wooden skewers
  • disposable air fryer liner

Ingredients

For The Chicken

  • 2 large chicken breasts trimmed of fat and diced into 1 inch cubes
  • salt & pepper
  • 1 1/2 tbsp minced, or pressed, garlic
  • 1/4 tsp smoked paprika
  • 1 - 1 1/2 tsp dried oregano
  • 1 tbsp lemon zest
  • 1 1/2 tbsp olive oil

For The Finishing Butter

  • 1/2 stick melted salted butter 4 tablespoons
  • 2 tbsp lemon juice
  • fresh lemon zest for garnish

Instructions

  • Add the chicken to a large mixing bowl along with the remaining chicken ingredients. Stir them together until everything's evenly combined. Cover and refrigerate for 20 minutes to marinate.
2 large chicken breasts, salt & pepper, 1 1/2 tbsp minced, or pressed, garlic, 1/4 tsp smoked paprika, 1 - 1 1/2 tsp dried oregano, 1 tbsp lemon zest, 1 1/2 tbsp olive oil
  • Thread the chicken onto skewers without overcrowding being sure to leave some of the skewer clear on both ends.
  • Add a liner to the basket of your air fryer, then add the skewers to it. Air fry at 400° for 12 minutes. Flip them, then continue cooking for another 6-8 minutes- until internal temperature measures 165°.
  • In a small bowl whisk together the melted butter and lemon juice until evenly combined. Set aside.
1/2 stick melted salted butter, 2 tbsp lemon juice
  • Transfer the cooked skewers to a serving plate, then baste liberally with the finishing butter, and sprinkle with lemon zest.
    fresh lemon zest
  • Serve warm and enjoy!

Notes

  • Don't skip the marinating time. This time lets the flavors sink into the chicken and lets the chicken get nice and tender.
  • Adjust the seasoning to suit your taste.
  • I recommend using fresh, not bottled, lemon juice in this recipe since the lemon is the dominate flavor.
