Loaded Hashbrown Casserole

This loaded hashbrown casserole is creamy, cheesy, and packed with savory flavor for a hearty, complete breakfast in one delicious dish. It's brimming with bacon, sausage, eggs, and gravy all baked on top a bed of shredded potatoes. Perfect for feeding a hungry crowd!

Ingredients

  • 1 2 lb bag frozen hashbrowns thawed and drained
  • 1 lb ground sausage cooked, crumbled, and drained
  • 12 oz bacon cooked crisp and crumbled
  • salt and pepper to taste
  • 1/2 tsp garlic powder
  • 2 cups shredded cheddar cheese divided
  • 1 pkt country gravy mix + 2 cups water
  • 6 large eggs beaten
  • sliced green onions for garnish

Instructions

  • Add the hashbrowns to a greased 9x13" casserole dish and spread them out in an even layer. Top with an even layer of sausage, followed by the bacon.

  • Sprinkle 1 cup of shredded cheese and the seasonings evenly out overtop of the dish.
    1/2 tsp garlic powder, 2 cups shredded cheddar cheese, salt and pepper
  • Prepare the gravy according to the package directions, then spread it over the casserole in an even layer.

  • Top with the beaten eggs, followed by the remaining cheese.

  • Bake the casserole at 375° for 45-50 minutes.
  • Carefully remove the dish from the oven and let it rest, undisturbed, for 5-10 minutes.
  • Slice, serve with sliced green onions on top for garnish, and enjoy!

Notes

  • Cook the sausage and bacon ahead of time for easy, day of prep.
  • Want to add some vegetables to this? Add some diced onions and bell peppers to the sausage layer.
  • Use whatever cheese you like and feel free to add other spices to this mix for even more flavor.
