Maple Bacon Chicken Salad

This maple bacon chicken salad takes the lunchtime classic and infuses it with some of your favorite brunch flavors. It's easy to throw together, and perfect for serving a crowd whether it's a brunch or a luncheon.

Ingredients

  • 1 - 1 1/2 cups chopped rotisserie chicken
  • 1/2 cup crisp crumbled bacon
  • 1/2 cup diced red onion
  • heaping 1/2 cup mayonnaise
  • 1/2 cup shredded cheddar cheese
  • 1 1/2 tbsp maple syrup
  • salt & pepper to taste

Instructions

  • Add the chicken, bacon, onion, and mayonnaise to a large mixing bowl. Stir together to evenly combine.
    1 - 1 1/2 cups chopped rotisserie chicken, 1/2 cup crisp crumbled bacon, 1/2 cup diced red onion, heaping 1/2 cup mayonnaise
  • Add the cheese and syrup to the mixture, again stirring to evenly combine. Salt & pepper the chicken salad, if desired, to taste.
    1/2 cup shredded cheddar cheese, 1 1/2 tbsp maple syrup, salt & pepper
  • Cover and chill for 1 hour before serving.

Notes

  • This recipe is ideal for repurposing leftovers, specifically rotisserie chicken and cooked, crisp bacon.
  • Be sure to use the specific ingredients called for, especially the real mayonnaise and maple syrup instead of pancake syrup. These main ingredients are key to the final flavor of the recipe.
  • DO NOT attempt to freeze leftovers. Mayonnaise separates when thawing and it won't taste well anymore.
