  • 1/2 cup grated Parmesan cheese
  • 1 tsp Italian seasoning
  • salt and pepper to taste

  • 1 cup half and half
  • 2 tsp cornstarch + 2 tsp water

Instructions

1 24 oz pkg frozen meatballs, 1 1/2 tbsp garlic paste, 1 tsp Italian seasoning, salt and pepper, 2 cups chicken broth
  • Cover and cook for 2-3 hours on LOW.
  • Add the half and half, gnocchi, Parmesan cheese, and tomatoes to the slow cooker. Stir gently to evenly combine, then cover, and cook for another 20 minutes.
1/2 cup chopped sundried tomatoes, 1/2 cup grated Parmesan cheese, 1 cup half and half, 1 16 oz pkg gnocchi
  • Whisk the cornstarch and water together until evenly combined then stir it into the slow cooker. Let it rest for 5-10 minutes.
    2 tsp cornstarch
  • Stir in the spinach and let it rest just until wilted.
    2 cups fresh baby spinach
  • Serve and enjoy!

Notes

  • Don't stir in the spinach before the end of the cooking process or it will over cook.
  • You can substitute tortellini for gnocchi, just cook it about ten extra minutes so the tortellini cooks through.
  • Don't worry if the sauce doesn't seem thick enough initially after mixing in the slurry. It will keep thickening as it sits.
