Spray a 12 count muffin tin with non stick cooking spray, and set aside.
Open the tube of pizza dough, unroll it, and spread it out on a clean cutting board. Roll the dough out slightly, but not too much, to make it a bit thinner.

Using a large biscuit cutter, with a circle slightly larger than the wells in the muffin tin, and cut out 12 circles of dough.
Add a circle of dough to each of the wells in the prepared muffin tin. Press them down flat in the center, and up the sides of the wells.
Using a smaller biscuit cutter, cut 2 circles out of each slice of cheese. Add a circle of cheese to the bottom of each dough cup.
8-10 slices mozzarella cheese
Top with 1-2 slices of pepperoni, followed by a spoonful of sauce, and finish with a few pieces of shaved Parmesan.

Bake the mini pizzas at 375° for 15 minutes, then carefully remove the tin from the oven, and let it rest for 2 minutes.
Run a butterknife around the edges of each well to release the pizzas.
