Old Fashioned Cabbage Casserole

Old fashioned cabbage casserole is a creamy side that is a staple on any Southern table. Chopped cabbage gets sauteed with onions in butter and mixed into a creamy mix before getting topped with a buttery, cheesy Ritz topping.

Ingredients

  • 1 small head green cabbage
  • 1 medium Vidalia onion peeled & chopped
  • 8 tbsp butter
  • salt and pepper to taste
  • 1 10.5 oz can cream of chicken soup
  • 1/3 cup mayonnaise

For Topping

  • 3 tbsp melted butter
  • 1 cup shredded cheddar cheese
  • 30 ritz crackers coarsely crushed

Instructions

  • Roughly chop the cabbage, then add the cabbage, onion, and butter to a large skillet set over medium low heat. Stirring often cook, for 8-10 minutes, until the cabbage has partially cooked down. Season with salt and pepper, to taste.

  • Transfer the cabbage mixture to a 9x13" baking dish and spread out in an even layer.
  • Add the soup and mayo to a small mixing bowl and whisk them together until evenly combined. Spread this mixture evenly out over the cabbage. Set aside.
    1 10.5 oz can cream of chicken soup, 1/3 cup mayonnaise
  • Add the butter, cheese, and crackers to another small mixing bowl. Toss until evenly combined and coated with butter. Spread the cracker and cheese mixture evenly out overtop the casserole dish.
    3 tbsp melted butter, 1 cup shredded cheddar cheese, 30 ritz crackers
  • Bake at 350° for 30 minutes, or until hot & bubbly and golden brown on top.
  • Serve warm & enjoy!

Notes

  • Use less salt than you think you need. The chicken soup has a lot of sodium in it. 
  • You could add some French fried onions to the topping for extra flavor and crunch.
  • Adding garlic to the cabbage and onion mixture would also add an extra layer of flavor.
