Omelet In A Mug

An omelet in a mug is the perfect meal for one! It's easily customizable to suit your taste and perfect for making when all you have to cook with is a microwave. And it's perfect for busy mornings when you just need to get breakfast in your belly before heading out the door!

Ingredients

  • 3 large eggs
  • 2 tbsp shredded cheddar cheese
  • 2 tbsp diced ham
  • 2 tbso thinly sliced green onions
  • salt & pepper to taste

Instructions

  • Spray the inside of a microwave safe coffee mug with nonstick spray.
  • Crack the eggs into the mug, discard the shells, and whisk them together.
    3 large eggs
  • Add the cheese, ham, and onions to the mug- stirring just until incorporated.
    2 tbsp shredded cheddar cheese, 2 tbsp diced ham, 2 tbso thinly sliced green onions
  • Salt & pepper the mixture, to taste.

  • Microwave for 1.5 to 2 minutes- but keep an eye on it in case it overflows.
  • Remove the fluffy, cooked through egg mug from the microwave and let it cool.
  • Eat warm and enjoy!

Notes

  • Watch the egg mixture carefully when you microwave it. The mixture WILL rise. We use extra large mugs that allow plenty of room for expansion.
  • All microwaves can differ in cook times, and you may need to adjust the cook time to adjust to yours. Start with less, then cook more- if needed.
  • Be careful when removing the mug from the microwave. It will be HOT.
