Orange Creamsicle Poke Cake

Ingredients

For The Cake

  • 2 ¼ cups flour
  • 1 ¾ cup sugar
  • 1 tablespoons baking powder
  • ½ teaspoon salt
  • 1 ¼ cups whole milk
  • ½ cup vegetable oil
  • 3 large eggs
  • 1 tablespoon vanilla extract

For The Orange Drizzle

  • 1 3 oz. Packet orange jello
  • 1 cup boiling water
  • ½ cup cold water

For The Topping

  • 1 cup whole milk
  • 1 4 oz. packet instant vanilla pudding
  • 1 8 oz. tub cool whip
  • 1 can mandarin oranges drained for garnish (optional)

Instructions

To Make The Cake

  • Preheat the oven to 350 F, grease and flour a 9x13 baking dish and set aside
  • In a large bowl, whisk together the flour, sugar baking powder and salt; set aside
    2 ¼ cups flour, 1 ¾ cup sugar, 1 tablespoons baking powder, ½ teaspoon salt
  • In a separate bowl, whisk together the milk, oil, eggs and vanilla. Pour into the flour mixture and stir until just combined.
    1 ¼ cups whole milk, ½ cup vegetable oil, 3 large eggs, 1 tablespoon vanilla extract
  • Transfer the batter into the prepared pan and bake for 35 minutes, or until a toothpick inserted in the center comes out clean.
  • Immediately poke holes on the surface of the cake with a skewer or handle or a wooden spoon.

To Make The Orange Drizzle

  • In the last 5 minutes of the cake baking, stir together the boiling water and orange jello until all crystals have been dissolved. Stir in the cold water, then pour the mixture over the warm cake.
    1 3 oz. Packet orange jello, 1 cup boiling water, ½ cup cold water
  • Allow to cool for 1 hour, then place in the fridge to chill for at least 3 hours.

To Make The Topping

  • In a large bowl, stir together the milk and the vanilla pudding mix. Fold in the cool whip, then spread over the cooled cake. Top with mandarin oranges if desired.
